The Cheese Route of the Dolomites which covers the Valleys of Fassa, Fiemme and Primiero marks a course through the heart of Trentino, performing a slalom, as in a daring descent on skis, amongst the finest characteristics of this land.
There are 72 protagonists of this initiative who, through the observance of certain qualitative standards, commit to promoting dairy products and other niche products from the local territory.
A journey along the Road of Cheeses of the Dolomites is not only a journey of taste, but it is also a journey through space and time, and a journey of the senses.
It is a means of getting to know the elegant Val di Fassa, the cradle of the Ladin historic and cultural heritage, with cheeses like Spretz Tsaorì, better known as the Puzzone di Moena [the Stinker of Moena], but also the flavoursome Nostrano di Fassa, that is produced in Campitello.
The nearby Val di Fiemme, land of the Magnifica Comunità di Fiemme, tells the story and the tradition of well known cheeses such as Dolomiti, Fontàl, Valfiemme, that are as famous as the goat ricotta, and above all the Caprino di Cavalese which is to be enjoyed, dulcis in fundo, with the excellent honey that is produced in these valleys. By carrying out the ascent towards Passo Rolle in a short time one is immersed in the Natural Park of Paneveggio - Pale di San Martino, where nature tells its own story through a rich programme of initiatives for adults and children alike. By crossing Passo Rolle one arrives in the Primiero: the Nostrani, the fresh and smoked riccotas, the Tosèla… Even in the butter you can taste all the flavour of the alpine huts and unspoiled places, such as the nearby Valle del Vanoi.
